Double-Chocolate Fudge

1 lb. milk chocolate morsels
1 lb. semi-sweet chocolate morsels
2½ Tbsp. butter
2 c. marshmallow crème
2 c. chopped walnuts
1 (12-oz.) can evaporated milk
4 c. sugar
Lightly butter a 9” x 13” x 2” baking pan; set aside.
In a large bowl, combine chocolates, butter, marshmallow crème, and nuts.
In a large saucepan over medium heat, combine evaporated milk and sugar. Bring to a boil and boil for 4 minutes, stirring constantly. Pour sugar mixture over chocolate mixture and stir until well blended. (Note: Do this quickly before fudge begins to cool and harden.)
Pour mixture into prepared pan; spread and smooth. Let cool and harden for approximately 6 hours. Cut into squares and enjoy! |

Candy Cane Cookies
1 c. shortening
1 c. sifted confectioners’ sugar
1 egg
1½ tsp. almond extract
1 tsp. vanilla extract
2½ c. all-purpose flour
1 tsp. salt
½ tsp. red food coloring
½ c. crushed peppermint candy
½ c. sugar
Preheat oven to 375°.
In a mixing bowl, beat together shortening, confectioners’ sugar, egg, and extracts until creamy.
In a large bowl, combine flour and salt. Add to shortening mix, mixing until combined. Divide dough in half. Add food coloring to one half of dough.
Using one teaspoon of dough, roll a 4” strip of each dough. Place strips side by side, press together lightly, and twist like a rope. Place on ungreased cookie sheet; curve top to form handle of cane. Bake for 9 minutes, or until lightly browned. While warm, sprinkle with crushed candy and sugar.
Makes about 4 dozen. |
